Tomatoes

Well it looks like we're going to be overrun with them this Summer.  I did a bit of research on the net about what I could do with them and ended up with a very simple and delicious solution.  I cut them all in half and put them in a baking dish, then cut up three cloves of garlic, I didn't cut the garlic too fine as all my suitable knives were in the dishwasher at the time and it's not easy cutting garlic with a bread knife.  But I was pretty sure I was going to put the finished product in the blender so that was okay.  I put the garlic in a bit of olive oil and poured that over the tomatoes, then a small amount of salt, and a large amount of freshly ground black pepper, then some fresh oregano from the garden.  I baked it in the oven for about an hour and a half, the website I got the idea from said from 40 to 60 minutes but that wasn't long enough to get them pulpy and "slightly charred".  They smelled wonderful.  The recipe suggested putting them through a sieve.  I don't mind seeds but I can't stand skin in cooked tomatoes.  When they were cool enough I poked them with a knife and found the skins came off easily so I did that by hand then put them into the blender and blitzed them into liquid, but with a bit of body to it.

Whacked it into a sterilised jar and felt very proud of myself.  It tastes really good and it wasn't until I'd finished that I realised there was no sugar in it, which is normal in a tomato sauce, but it really didn't need it, roasting the tomatoes seemed to take the edge off them.  Not sure what I'll make with it but I'm certainly going to have fun with all the fruit we're going to have, I found lots of recipes and ideas to try.
Just did meatloaf last night, with my usual ketchup/soy sauce glaze but added some Cajun seasoning which gave it a really nice kick.  Put in a lot of pureed broccoli and cauli for my boy who won't eat vegies apart from certain types of salad.  He had his with oven fries and we had mashed potato/sweet potato and more broccoli and cauli.
Phill cleaned the fish bowl out yesterday and finally got his fishy thing to work with the fountain.
Not so hot today thankfully, and Phill has gone to work for which I am even more thankful.

I have a sieve ... used it ONCE!
Took the lazy way out after that and dipped the tomatoes into boiling water, set them aside to cool a bit and removed the skins before I chopped them up and tossed them in a deep pan to cook down. Once cooled I poured them in zip lock freezer bags with the tear written on them and lined them up at the back of my freezer.
If we lived close I'd give you my sieve, It's LIKE NRW :0)

WOMAN...if I didn't know better I'd think you never got out of your kitchen ! You make me think back to when I was your age and I loved to cook.
