I got busy in the kitchen and made a low fat jaffa cake and some cornflake cookies for the kids' school lunches.
Josh and I picked the last of the oranges off our tree. Fresh unwaxed oranges are SO easy to grate rind from. The recipe called for two heaped tablespoons and I got that quickly and easily.
It also had flour, egg white, sugar, bottled apple sauce, choc chips and orange juice. Bi carb was mixed into the apple sauce to give some lightness but I stuffed up on two counts. I should have beaten the egg white and sugar with the electric beater rather than a whisk (I got lazy) and I should have put the apple and bi carb into another bowl rather than trying to mix the bi carb into the sauce while it was still in the 1/2 measuring cup. The texture was too dense and tough but the flavour was wonderful and I'll give it another go this week. I iced it with icing sugar and orange juice.
The cookies were great. So I have home baked school snacks for today for our new resolve of healthy packed lunches. I got up early and cooked some chicken breast in chicken teriyaki sauce to put on wraps with salad. No more money for the school canteen which disappointingly sells expensive and unhealthy choices. They charge $3.00 for a bottle of water! And the education department is trying to encourage healthy choices.
Today is another busy day, I'm expecting to hear from the real estate today or tomorrow so that should be interesting.
Five more days of term then two weeks school holidays and we're all looking forward to it.

Yum! They look delicious! Homemade goodies are far better for kids than prepackaged crap full of preservatives! Your kiddos are very lucky! :-)
