I need to type the recipe into my computer anyway so thought I'd put it here. This recipe is a real keeper. Once cold, it's moist yet firm and easy to cut. The topping makes it, sweet and crunchy. Great for lunch boxes.
Banana Bread
3/4 cup self raising flour
3/4 cup plain wholemeal flour
3/4 tsp baking powder
2 tsp ground cinnamon
plus 1 tsp extra
1/2 cup caster sugar
1 cup mashed banana
1 egg, lightly beaten
1 x 200g tub Nestle Diet Vanilla yoghurt
1 tbs rice bran or olive oil
1 tbs brown sugar
1 tbs pepitas (pumpkin seeds)
1 tbs sunflower seeds
Preheat oven to 200C or 180C fan forced. Lightly spray a 1L (4 cup) capacity 20cm x 8 cm x 6 cm base loaf tin with oil and line with baking paper to prevent sticking. Combine self-raising flour, wholemeal flour, baking powder, 2tsp cinnamon and caster sugar in a medium bowl.
Combine mashed banana, egg, yoghurt and oil in another bowl then fold into the flour mixture. Spread mix into prepared tin and sprinkle with brown sugar, extra cinnamon, pepitas and sunflower seeds.
Bake for 50-55 minutes or until a skewer inserted in the centre comes out clean. Stand for 5 mins before turning onto a wire rack to cool.
Serve warm or at room temperature.
Serves 10.

Did you know that you can freeze overripe bananas for making banana bread? I didn't. The skins will go black but the flesh is perfect inside for making breads or cakes.
Phill rang the real estate yesterday and the PM was very nice and apologetic that she hadn't sent a letter re the inspection last week. She told him that the CL was very happy with the house and how we're looking after it. She doesn't want a new lease, that's fine with us too, and definitely doesn't want us to move out. The PM told Phill the previous tenant lived here for five years on an expired lease. I can't imagine living ANYWHERE for five years! Apart from my childhood home in Sydney I never have I don't think. No talk of raising the rent which surprised me as we're paying about $100 per week less than the current market rent here. I'm kind of in shock. I don't want to leave Cootamundra until the kids have finished high school and it's kind of nice to know we can stay here for that time if we want to. CL will never sell according to the PM. This house is small but it's comfortable and if CL can live by the rules of good landladyship there's no reason not to stay here. So now we have plans, we will have our pool this Summer one way or another. We had a look yesterday and figured out we can put pool fencing at either end of the stables, where we had the pool last Summer, with the self closing safety gates that are required by the council, we can probably get it cheap second hand. I also want to start replacing all of our crappy furniture and lamps. All the moving over the years have seen our things damaged and broken and it's time to replace and update. First on the list will be a new tv unit, I know exactly what I want so will start looking for that. I do love lamplight about the house but all of our lamps are cheap bargain shop jobs and very tacky. Josh will need a new bigger bed next year also so that's on the list and we all need new bedside tables.
We are also going to start looking into getting a chicken coop to put in the exercise yard. We'll only get 3 or 4 chooks this time and they can have the run of the two back yards and we can close off that area and still have a garden and a nice backyard to live in. Our girls at Junee had the run of the whole huge property and decimated our gardens there. I do miss their lovely fresh eggs, and their funny antics though.
I did veal last night. Slowly retraining my spoiled (by me) kids to sit down to the same meal as we do every night. I crumbed the veal steaks then made a tomato sauce and put ours under the grill with a bit of pizza cheese on the top and just served Josh the crumbed bit. Em refused to eat it as she says she doesn't eat "baby animals". Don't know what she thinks lamb is but still. Josh looked at ours and said why do you have sauce and cheese and I don't? I can't win! We gave him some of ours and he quite liked it so I'll give him that next time. They both ate their teriyaki wraps and their home baked goodies at school and enjoyed them. I have some more chicken on the stove now for Josh, I'll roll the wraps this time like the sandwich shops do rather than fold it like I did yesterday. I made another batch of cookies, with rice bubbles this time.
I have a lamb roast out for tonight, I do it in the electric frypan like Mum always did. I'm a better cook than my mother but I can never beat her lamb roast. She always got the pumpkin really browned, almost black, which makes the best tasting gravy.
I have an appointment with the D&A counsellor this morning. I'm not much of an interesting client I'm afraid. I've had no problems so far giving up the booze. No deep emotional stuff has come up yet and I'm just feeling healthy, happy, calm and grateful that I don't seem to have damaged my health too much with all the years of abuse.
I've lost close to 5kg in two weeks, and I'll need to get a new pair of jeans for the Melbourne trip, the ones I have are falling off me.
Emily spent hours catching up on the assignments that she hasn't handed in. We were so amazed to see the work she produced, and I told her if she worked like that all the time, especially next year when she's in year 10 and things get serious, she will ace her school certificate. I wish she had room for a desk in her bedroom but she seemed to work quite happily at the computer last night and got it all done before bed. She will go to her last mentoring day on Thursday and the school is talking about carrying it on next term. I'm happy about that as long as she keeps up with her school work.
My nephew's wife is a week away from the due date for her first baby, she's already 3cm dilated according to my sister so she could go into labour at any time. New babies in the family never get old and I'm so excited. My sister's boys are particularly dear to me, they are just the nicest men you could meet and I'm so happy for my sister to welcome her second grandbaby. We'll be even then!
