Little Beef Wellingtons

Phill got a couple of packs of fillet steak marked down the other day.  I had some low fat puff pastry in the freezer.  I thought of some little beef wellingtons and found this recipe online.

Really nice and very easy especially with my new stab blender and its attachments.  I was surprised that the steaks weren't browned first but they turned out well and properly cooked.  The sauce of the puree mushies and garlic mixed with the gravy powder, top and bottom made the dish.  No, not low fat or salt free but very tasty and good for a "sometimes" dinner.  We had it with oven fries and a salad that Phill painstakingly made, still it kept him busy and out of the pinball parlours etc.

I phoned the distance ed high school this morning and just as well I did, our principal hadn't done anything about it.  I found out what we need to enrol and rang the school and left a message for Garry who later rang back having hurriedly organised a meeting for Wednesday with the district person and us to get the ball rolling.  Also rang Fliss to organise the necessary documentation from her end.  I found out that there are so called "satellite schools" ??? both in Young and here for kids who can't attend normal school.  Nobody else bothered to tell us about these or what they entail, but I feel now that full time distance education is right for Emily.  She needs a safe and nurturing environment, at least in the beginning, so she can concentrate fully on getting back into good study habits.  I'm all about following my instincts these days.  But it makes me wonder what other supports are out there that nobody told us about, either out of ignorance, apathy or just to further their own agendas.

I had a horrible night last night, sweats and panic attacks, sometimes both at once, and just one after the other, for hours.  It's so weird, and in spite of the menopause supplements and the cream I'm using and the fact that I am still having dead on regular periods each month.  And these things only seem to happen at night!

To Natalie who asked how to put photos on a blog, first you need to have your photos uploaded onto your computer, either with the SD card from your camera, or the camera's cable into your computer, or from scanning them in.  Then once you know where they are, you click on the little picture icon on the top of your post as you are typing.  Once you've got it all figured out it's really easy and quick, I love it, I have an SD card in my camera and a slot in my laptop so can take a photo right now, I'm watching Rick Stein in the tv in my bedroom.

Trusting my instincts has been one of the best decisions I have ever made. Glad you're doing it too.

B's previous primary school Headmaster gave me some really good advice when B first started school. He said, "You have to be your child's advocate, no one will ever be as interested in your child as you are." At first I was shocked, but soon realised how honest he was being.

I'm hanging out for menopause. I have had night sweats too, thankfully not panic attacks, but my husband wouldn't agree with that!

Could the supplements encourage your periods?

I think there is something going around cosmically, several people I know have been having night terrors, sweats, anxiety panic attacks at night..hope it goes away.

hey you- I've been "away" a bit, too much going on. I've missed visiting. Your dinner sounds yum. I am going to have to scan posts and see what is going on and why your registering at a new school. We had conferences 2 weeks ago (in elementary school there is a yearly mandatory conference after they've been in for 9 weeks. until 5th grade) and the vice principal introduced me to a teacher in the hall "this one is a real mother bear" yes. yes I am. *wink* hope you get it all sorted out.
